AUGUST August - At this time of year you might be enjoying your summer holidays. Peppers, tomatoes and aubergines are in season so why not enjoy this classic French vegetable stew. Not only will our healthy recipe count towards your ‘5 a day’ fruit and vegetable recommendation, vegetables are packed with fibre, vitamins and minerals which will help to keep you healthy!
RatatouilleServes 4
Ingredients:
1 red pepper, chopped 1 yellow peppers, chopped 4 large ripe tomatoes, chopped 2 large courgettes, sliced (1/4 inch) 2 large aubergines, cubed 1 medium onion, chopped 2 garlic cloves, crushed/finely chopped 1 tablespoon of olive or vegetable oil 1 tablespoon of red wine vinegar Herbs – basil, thyme and oregano (fresh or dried) Black pepper to seasoning
Method:
1. Prepare the vegetables as above. 2. In a large non stick pan heat the oil. 3. Add the onion and garlic and cook until softened. 4. Add the aubergine, courgette and peppers and cook till soft. 5. Add the tomato and herbs and stir in the red wine vinegar. 6. Season to taste with black pepper.
Leave to simmer for 15 minutes and then serve
To make a well balanced meal serve with a skinless, grilled breast of chicken or a grilled tuna steak. Serve with pasta, cous cous, rice or some fresh bread
